Salmon Patties with Lemon Sauce

A nice homemade dinner on the table, some Herbie Hancock playing in the room… Father’s Day dinner is amazing.

Ingredients:

  • 1 can salmon, drained and bones removed
  • 3/4 cup milk
  • 1 egg, beaten
  • 1 cup soft bread crumbs
  • 1 tbsp. chopped parsley
  • 1 tsp. minced onion
  • 1/2 tsp. Worchestershire sauce
  • salt and pepper

Combine ingredients; mix well. Spoon into 10 greased muffin cups. Bake at 350° for 45 minutes or until browned.

Lemon Sauce Ingredients:

  • 2 tbsp. butter
  • 4 tsp. AP flour
  • 3/4 cup milk
  • 2 tbsp. lemon juice
  • 1/4 tsp. salt
  • 1/8 to 1/4 tap. Tobasco

Melt butter in saucepan; stir in flour to form a smooth paste. Gradually stir in milk; bring to boil over medium heat, stirring constantly. Cook for 2 minutes or until thickened. Remove from heat and stir in the lemon juice, salt, and Tobasco. Serve over patties.

Grilled onions, giardiniera, Italian beef, an Italian sausage, one poor bun that never stood a chance.

And there was au jus on the side, but I had difficulty formulating a strategy for that.
